  • Basmati rice = half kg

  • Oil = 200 grams
  • Saffron color = half a teaspoon
  • Salt = as per taste
  • Bay leaf = two leaves
  • Red chili powder = two teaspoons
  • Lemon = Aadad
  • Long = 8 times
  • Black pepper = 10
  • Small cardamom = 8 leaves
  • Large Cardamom = Five Adad
  • Cinnamon = three pieces
  • Nutmeg and sorghum = a little
  • Cumin = one teaspoon
  • White pepper = 10
  • Dried rose leaves = little
  • Kevda water = according to need
  • Milk = half a glass

Method – How To Make Kolkata Style Best Chicken Biryani

First of all we will marinate the chicken, for this, add one teaspoon of ginger garlic paste, one teaspoon of curd, one teaspoon of red chili powder, mix it well and keep it covered for an hour.

Now add potato salt, saffron color, lemon and bay leaves in a pan.

Roast all these spices in long, small Ilauchi, cinnamon, big cardamom, nutmeg, sorghum, white paper, cumin, dry rose pepper and grind them dry.

Now put oil in a pan and fry the pieces of chicken, fry the chicken for ten minutes. When the chicken is cooked from both sides, then take it out.

Now mix the saffron, kevda water in the milk and mix it. Now take another pot and put potatoes in it and add the gravy of spices and add some water in it. Now add ground hot spices and squeeze the lemon Add Kevda water and mix it.

Now after this, garnish the chicken pieces on top of it and spread one layer of rice on top, add the remaining hot spices from the top and pour milk on top of it. Now spread the second layer of rice and the remaining leftover it Add all the milk.

And after that put oil, now put the dough in its lid all around and keep it on slow gas.
